Cooking in my small kitchen has always been a challenge. So much so that it had even become a deterrent too cooking at home and I gave up trying to do much of anything beyond the very basics. I hate to admit this but my husband and I found ourselves spending more and more time (and money) in restaurants instead of our own kitchen. The kitchen had become more of a pass through to get into the rest of the house than a place to make healthy and yummy meals for our family. If I ever cooked at home it seemed like a special occasion even when it was only spaghetti, or a simple meat loaf. It isn’t that I don’t like to cook; it’s quite the opposite actually. I enjoy trying new recipes and tweaking them to make it my own. My kitchen and I however, have a “hate, love” relationship. I hate my 1940 hardly functional no counter or cupboard space kitchen, but I must somehow learn to love it. Well, at least get along with it.
With a 18 month old son, and a new baby due in the spring its time to make up with my kitchen. My challenge then is to make mostly nutritious (we have to be naughty sometimes), always delicious meals for my growing family. Thankfully our 18 month old son loves food and will eat anything at this point. My goal is to provide a solid nutritional basis for him and with any luck we will skip the picky eater phase all together.
